++Cheese Pie++

Pie Crust: 
- 1 1/2 cups graham cracker or digestive biscuit crumbs
- 6 table spoons melted butter 
- 1 1/2 table spoons sugar (if you don’t like too sweet, can skip this ingredient) 

Filling:

- 1 8 oz. Cream Cheese, softened
- ¾ cup sour cream
- 65 gram sugar or 1 cup of sweetened condensed milk
- 2 table spoons lemon juice
- 1 can blueberry or cheery

- 1 tea spoon vanilla extract
- 1 table spoon of unflavored colorless gelatin powder

- 1/3 cup of hot water

 

1.    Combine all the crust ingredients with a fork until well blended.  Press in a 9 inch pie pan.  Chill in the fridge for about 15 minutes. 

2.    Beat the cream cheese and sugar (or sweetened condensed milk) with an electric mixer.  Add in vanilla extract.

3.    Dissolve the gelatin in hot water and add in the cream cheese mixture. Beat until well blended and cream cheese fluffy.

4.    Spoon over crust and let chill in the fridge for about 3 hours or until set. Top with some blueberry preserves or fresh ones which ever you prefer. Can do your favorite fruit topping too!
